Made from 100% Albarińo, hand-harvested from estate vineyards in the Salnés Valley, north of Pontevedra. The grapes are de-stemmed before pressing at low temperature and pressure. The juice is further cold racked to remove any impurities. Fermentation – with native yeasts – is in temperature-controlled, stainless-steel tanks (between 17-18º celsius) to capture the signature grape varietal characteristics. Aging is also in stainless steel tanks, on the lees, for up to three months. 13% alc./vol.; R.S. 3.8 gr/L..
Our Tasting Note: Bright, straw-lemon-yellow colour. Fresh, slightly floral, aromas and flavours to apple and pear, warm citrus, and lemon, with mineral/herbal notes (eg laurel). Light- to medium-bodied, dry, with a fresh mouthfeel of acidity and a long clean, elegant finish.
Pairings: Excellent on its own, but it will pair well with seafood, shellfish, sushi, grilled white meats, Paella, and grilled vegetables.
