King Prawn Pil-Pil 
Classic King Prawns baked in Chilli Oil with slivers of Garlic Red & Green Chillis. With an added touch of diced Vine Tomato. So morish!

Chicken and Red Rice Enchiladas, Crumbled Feta, Scallions and Garlic Oil 
Arborio rice baked in a rich smokey frito sauce, spiced with Chipotle and Wrapped in tortillas with shredded wood-roasted Chicken, brushed with wild Garlic Oil and topped with crumbled Feta & Scallions.

4-hour Braised St Louis Pork Rib, Chipotle, Tomato and Piquillo Jus
Delicious melt in the mouth slow braised Pork Rib joint in a rich Silky Jus, enhanced with vine Tomatoes and smokey Piquillo Peppers.

Charred Sweetcorn, Chilli, Lime and Miso Butter
Plump juicy corn husks charred with lashings of Zingy Chilli, Lime and Coriander butter with a hint of Miso.

Baby Tomato and Chickpea Salad, Lilliputian Capers, Basil Oil and Coriander 
A delicate and refreshing side salad, bursting with flavour and texture. Sunshine in a bowl!

Yoghurt and Mountain Honey Mousse, Macerated Summer Berries and Compressed Watermelon
Extra thick yoghurt enriched with Mountain Honey, complimented with Strawberries, Raspberries, Pomegranate and refreshing compressed Watermelon with a hint of Aged Rum.
