Buffalo Chicken Wings with Blue Cheese Dip (USA)
Buffalo Chicken Wings are a national treasure in America and happy hour wouldn’t be the same without them. These are deeply messy and addictive bites that are hard to resist!

Queso Frito (Spain)
Delicious deep fried cheese in an almond and hazelnut crumb, with a fruity fig and port chutney. Who can’t resist creamy molten cheese? A homage to Mercado San Miguel in Madrid.

Gambas Pil Pil (Spain)
Plump king prawns in a delicious garlic chilli oil. A staple dish around the whole of the Mediterranean. Don’t forget to have some crusty bread at the ready!
Frittelle di Zucchine (Italy)
In many parts of Italy, especially Sardinia, courgette fries are more popular than chips! I have added a little Pecorino cheese to give these delicious fritters a salty lift, served with a delicious mint and coriander dip.

Bulgogi literally translates to fire meat, it is by far Korea’s most popular dish with numerous variations. The pork is marinated in a rich gochujang marinade and cooked over charcoal.

Chicken and Red Rice Enchiladas with Crumbled Feta (Mexico)
Arborio rice baked in a rich smokey frito sauce, spiced with Chipotle and Wrapped in tortillas with shredded wood-roasted Chicken, brushed with wild Garlic Oil and topped with crumbled Feta & Scallions.

Baby potatoes gently boiled till dry in salt water.
Green Coleslaw with Nigella Seeds (Worldwide)
Coleslaw can be traced back to Roman times but more modern versions originate from Dutch settlers who founded New York State and grew cabbage on the banks of the Hudson River. Today, coleslaw can be found on menus all over the world.

Delicious fragrant couscous type salad with flavors of the Mediterranean, with saffron, mint, basil, tomato and a hint of garlic and sesame.
